- 2 large sweet potatoes, peeled and cut into thick rounds
- 1 cup apple cider
- 1/4 cup butter
- 2 tablespoons maple syrup
- 1 small onion, finely sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat and soften the sliced onion until translucent and fragrant, about 3–4 minutes.
Add the minced garlic and thyme; cook for another 30 seconds to wake up the aromatics.
Nestle the peeled sweet potato rounds into the skillet, giving them a quick toss to coat in the butter and onions.
Pour in the apple cider and drizzle with maple syrup. Sprinkle with salt and pepper.
Bring the liquid to a gentle simmer, then cover the skillet and transfer it to the oven.
Bake for 25–30 minutes, until the potatoes are very tender and the liquid has reduced to a glossy, syrupy glaze.
Carefully remove from the oven. If you like a deeper glaze, simmer on the stovetop for a couple of minutes to reduce further before serving.
