Ingredients
  

  • 2 large sweet potatoes, peeled and cut into thick rounds
  • 1 cup apple cider
  • 1/4 cup butter
  • 2 tablespoons maple syrup
  • 1 small onion, finely sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt the butter over medium heat and soften the sliced onion until translucent and fragrant, about 3–4 minutes.
  • Add the minced garlic and thyme; cook for another 30 seconds to wake up the aromatics.
  • Nestle the peeled sweet potato rounds into the skillet, giving them a quick toss to coat in the butter and onions.
  • Pour in the apple cider and drizzle with maple syrup. Sprinkle with salt and pepper.
  • Bring the liquid to a gentle simmer, then cover the skillet and transfer it to the oven.
  • Bake for 25–30 minutes, until the potatoes are very tender and the liquid has reduced to a glossy, syrupy glaze.
  • Carefully remove from the oven. If you like a deeper glaze, simmer on the stovetop for a couple of minutes to reduce further before serving.
