Ingredients

  • 2 cups cooked shredded chicken
  • 3/4 cup BBQ sauce
  • 8 slider buns soft slider buns
  • 1 cup coleslaw mix
  • 2 tablespoons mayonnaise
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon black pepper
  • Optional pickle slices or fresh cilantro

Instructions

  • In a medium bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is evenly coated and glossy. If you like a stronger BBQ punch, add a little more sauce and let it sit for 5 minutes to meld.
  • While the chicken rests, toast the slider buns cut-side down in a dry pan or on a sheet pan in a warm oven for 2–3 minutes until lightly golden. Keep an eye on them so they don’t burn.
  • Prepare a quick creamy slaw by whisking the mayonnaise with the apple cider vinegar and black pepper. Toss in the coleslaw mix until evenly coated. Let it sit for a couple of minutes to let the flavors come together.
  • Assemble the sliders by placing a generous scoop of the BBQ chicken on each bottom bun. Top with a tablespoon of creamy slaw and, if you like, a couple of pickle slices or a pinch of cilantro for brightness.
  • Cap with the top bun and lightly press to compact. Serve immediately while warm and juicy, or keep the components separate and assemble just before serving for a crowd.
  • For make-ahead meal prep, refrigerate the BBQ chicken and slaw separately for up to 24 hours. Reheat the chicken gently on the stove or in the microwave, and assemble with fresh buns and slaw just before serving to maintain crunch.
