- 2 cups shredded cooked chicken
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 ripe tomato, sliced
- 1/2 red onion, thinly sliced
- 1 cup shredded cheddar cheese
- 1/2 cup corn kernels (frozen or fresh)
- 2 tablespoons optional fresh cilantro, chopped
- salt and pepper to taste
If your chicken isn’t already cooked, flavor it lightly with salt, pepper, and a splash of water or light broth, then quickly sauté or grill until fully cooked. Let it rest a minute, then shred.
In a small bowl, mix the shredded chicken with the BBQ sauce until everything is evenly coated and glossy.
Warm the tortillas in a dry skillet for about 20-30 seconds per side, or in a microwave wrapped in a damp towel for 15-20 seconds to make them pliable.
Lay a tortilla on a clean surface. In a line down the center, start with a bed of lettuce, then add chicken mixed with BBQ sauce, sliced tomato, red onion, corn, and shredded cheese. Top with cilantro if using.
Fold the sides over the filling, then roll tightly from the bottom to form a burrito-like wrap. If needed, secure with a toothpick or wrap the end with a thin slice of lettuce to help keep it closed.
Repeat with the remaining tortillas and fillings. Slice each wrap in half on a diagonal for a prettier presentation.
If you like a slightly crisp finish, place the wrapped wraps seam side down in a hot skillet for 1-2 minutes per side, just until the cheese starts to melt and the tortilla develops a light crust.
