Ingredients

  • 2 cups grilled chicken, chopped
  • 4 large flour tortillas
  • 2 cups romaine lettuce, torn
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Caesar dressing
  • 1 tablespoon olive oil
  • to taste freshly ground black pepper

Instructions

  • If you’re starting with raw chicken, season and cook it until fully cooked, then let it rest and chop into bite-sized pieces. If using pre-cooked chicken, simply shred or dice it.
  • In a large bowl, toss the romaine with the chopped chicken and half of the Parmesan. Add the Caesar dressing and toss to coat until everything is well dressed but not soggy.
  • Warm the tortillas briefly in a dry skillet or microwave to make them pliable. Spread a thin layer of additional dressing on each tortilla, if desired.
  • Distribute the dressed mixture evenly among the tortillas. Top with a sprinkle of remaining Parmesan and a light crack of black pepper.
  • Fold the sides in and roll the wraps tightly. Slice in half on the diagonal and serve immediately for best texture.
