Chicken Satay with Peanut Sauce

Juicy, marinated chicken skewers kissed with warm Southeast Asian flavors, paired with a creamy, slightly sweet peanut sauce. This dish comes together with simple pantry ingredients and makes a fantastic centerpiece for casual dinners or gatherings.

Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch strips
  • 2 garlic cloves, minced
  • 1 small onion, grated (or 1 teaspoon onion powder)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon peanut butter
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric (optional)
  • to taste salt and pepper

  • 1/2 cup peanut sauce, for serving

Instructions
 

  • If using wooden skewers, soak them in water for 20–30 minutes to prevent burning during cooking.
  • In a bowl, whisk together garlic, grated onion, soy sauce, peanut butter, honey, lime juice, coriander, turmeric, and a pinch of salt and pepper. Add the chicken strips and toss to coat. Let marinate for 15–30 minutes for best flavor.
  • Preheat your grill, grill pan, or broiler. Thread marinated chicken onto skewers, leaving a little space between pieces for even cooking.
  • Grill or broil the skewers for about 6–8 minutes, turning once, until the chicken is cooked through and has a light char.
  • Warm the peanut sauce gently in a small saucepan or microwave until smooth and pourable. If you prefer extra creaminess, whisk in a touch of water or coconut milk to reach the desired consistency.
  • Serve the hot skewers with a generous drizzle of peanut sauce on the side or dipped into it. Garnish with chopped peanuts, cilantro, or lime wedges if you like.
