Cilantro Lime Grilled Sweet Potato Skewers

- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1/2 cup fresh cilantro, finely chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika or chili powder
- 1/2 teaspoon salt, plus more to taste
- black pepper to taste
- 6 skewers (if using wooden skewers, soak for 30 minutes)
- Optional extra lime wedges for serving
Preheat your grill to medium heat and soak wooden skewers if using them.
In a large bowl, toss the sweet potato cubes with olive oil, lime juice, lime zest, cumin, and smoked paprika. Season with a pinch of salt and pepper.
Thread the potato cubes onto skewers, leaving a little space between each piece for even cooking.
Grill the skewers, turning every 2–3 minutes, for about 12–15 minutes or until the potatoes are tender and nicely charred on the edges.
Remove skewers from the grill and immediately toss with chopped cilantro. If you like an extra burst of brightness, finish with a squeeze of lime juice.
Taste and adjust seasoning with a little more salt or lime juice if needed. Serve warm with lime wedges on the side.
