Cilantro Lime Grilled Sweet Potato Skewers

Tangy lime, fresh cilantro, and smoky grill marks come together with tender sweet potatoes on skewers. This easy, colorful dish makes a light, flavorful side or a vegetarian main for summer cookouts.

Ingredients
  

  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 cup fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika or chili powder
  • 1/2 teaspoon salt, plus more to taste
  • black pepper to taste
  • 6 skewers (if using wooden skewers, soak for 30 minutes)
  • Optional extra lime wedges for serving

Instructions
 

  • Preheat your grill to medium heat and soak wooden skewers if using them.
  • In a large bowl, toss the sweet potato cubes with olive oil, lime juice, lime zest, cumin, and smoked paprika. Season with a pinch of salt and pepper.
  • Thread the potato cubes onto skewers, leaving a little space between each piece for even cooking.
  • Grill the skewers, turning every 2–3 minutes, for about 12–15 minutes or until the potatoes are tender and nicely charred on the edges.
  • Remove skewers from the grill and immediately toss with chopped cilantro. If you like an extra burst of brightness, finish with a squeeze of lime juice.
  • Taste and adjust seasoning with a little more salt or lime juice if needed. Serve warm with lime wedges on the side.
