Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment for easy cleanup.
  • Prep the potatoes by peeling (or leaving the skins on for extra texture) and cutting them into bite-sized chunks that are roughly uniform in size.
  • In a large bowl, whisk together the melted butter, brown sugar, cinnamon, salt, pepper, and orange juice (or water) until smooth.
  • Toss the potato chunks in the glaze until they’re evenly coated. Spread them out in a single layer on the prepared baking sheet so they roast rather than steam.
  • Roast for about 25–30 minutes, flipping once halfway through, until the edges are caramelized and the centers are tender.
  • If you like a deeper glaze, return the tray to the oven for an additional 5–7 minutes, watching closely so the glaze doesn’t burn.
  • Remove from the oven and let cool for 5 minutes before serving. The potatoes will shine with a glossy glaze and a soft, melt-in-your-mouth interior.
