Citrus-Marinated Chicken Skewers

Ingredients
  

  • 1.5 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons orange juice
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon soy sauce (optional)
  • 1 teaspoon paprika
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 lemon zest (from 1 lemon)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1/2 red onion, cut into wedges
  • wooden skewers, soaked in water for 30 minutes

Instructions
 

  • Whisk together olive oil, lemon juice, orange juice, minced garlic, honey, soy sauce (if using), paprika, lemon zest, salt, and pepper in a large bowl.
  • Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  • Thread marinated chicken onto skewers, alternating with pieces of red and yellow bell pepper and red onion.
  • Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  • Grill skewers for 8–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred in spots.
  • Rest for 5 minutes before serving to allow the juices to redistribute.
