Citrus-Marinated Chicken Skewers

- 1.5 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons orange juice
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon soy sauce (optional)
- 1 teaspoon paprika
- 1 pinch salt
- 1 pinch black pepper
- 1 lemon zest (from 1 lemon)
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1/2 red onion, cut into wedges
- wooden skewers, soaked in water for 30 minutes
Whisk together olive oil, lemon juice, orange juice, minced garlic, honey, soy sauce (if using), paprika, lemon zest, salt, and pepper in a large bowl.
Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Thread marinated chicken onto skewers, alternating with pieces of red and yellow bell pepper and red onion.
Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
Grill skewers for 8–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred in spots.
Rest for 5 minutes before serving to allow the juices to redistribute.
