Classic Garlic Butter Melting Sweet Potatoes

A cozy, weeknight friendly side that turns humble sweet potatoes into molten, garlicky goodness crowned with a glossy butter sauce. The dish is naturally sweet, warmly savory, and full of comforting aroma from roasted garlic and fresh herbs. It pairs beautifully with roasted chicken, grilled salmon, or a hearty grain bowl.

Ingredients
  

  • 4 medium sweet potatoes
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh lemon juice or honey (optional for brightness)
  • 1 tablespoon chopped fresh parsley or chives

Instructions
 

  • Preheat the oven to 425 F (220 C). Line a baking sheet with parchment for easy cleanup.
  • Wash and dry the sweet potatoes. Cut them into roughly even thick rounds or wedges to ensure they cook through at the same rate.
  • Toss the sweet potato pieces with olive oil, salt, and pepper until coated on all sides.
  • Spread the potatoes in a single layer on the prepared baking sheet. Roast for 18 to 22 minutes, flipping once, until the edges are caramelized and the centers are tender.
  • Meanwhile, melt the butter in a small saucepan over low heat. Add the minced garlic and cook gently for 1 to 2 minutes, just until fragrant and softened. Do not brown.
  • When the potatoes are nearly done, drizzle the garlic butter over them and toss to coat. Return to the oven for an additional 2 to 4 minutes to meld the flavors.
  • Remove from the oven. If using lemon juice or honey, whisk it into the warm butter and drizzle over the potatoes for a bright finish.
  • Transfer to a serving dish, sprinkle with chopped parsley or chives, and serve hot.
