Classic Garlic Butter Melting Sweet Potatoes

The dish is naturally sweet, warmly savory, and full of comforting aroma from roasted garlic and fresh herbs. It pairs beautifully with roasted chicken, grilled salmon, or a hearty grain bowl.

- 4 medium sweet potatoes
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh lemon juice or honey (optional for brightness)
- 1 tablespoon chopped fresh parsley or chives
Preheat the oven to 425 F (220 C). Line a baking sheet with parchment for easy cleanup.
Wash and dry the sweet potatoes. Cut them into roughly even thick rounds or wedges to ensure they cook through at the same rate.
Toss the sweet potato pieces with olive oil, salt, and pepper until coated on all sides.
Spread the potatoes in a single layer on the prepared baking sheet. Roast for 18 to 22 minutes, flipping once, until the edges are caramelized and the centers are tender.
Meanwhile, melt the butter in a small saucepan over low heat. Add the minced garlic and cook gently for 1 to 2 minutes, just until fragrant and softened. Do not brown.
When the potatoes are nearly done, drizzle the garlic butter over them and toss to coat. Return to the oven for an additional 2 to 4 minutes to meld the flavors.
Remove from the oven. If using lemon juice or honey, whisk it into the warm butter and drizzle over the potatoes for a bright finish.
Transfer to a serving dish, sprinkle with chopped parsley or chives, and serve hot.
