Ingredients
  

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste fresh parsley or cilantro, chopped
  • optional parmesan or nutritional yeast

Instructions
 

  • Wash and dry the sweet potatoes thoroughly. Leave the skin on for extra texture and nutrients, or peel if you prefer a smoother bite.
  • Slice the sweet potatoes into 1/8 to 1/16-inch rounds. A mandoline gives the most uniform results; if slicing by hand, try to keep the thickness consistent for even cooking.
  • In a large bowl, toss the slices with olive oil, sea salt, black pepper, smoked paprika, and garlic powder until each slice is lightly coated.
  • Preheat your air fryer to 375°F (190°C) for about 3 minutes. Preheating helps ensure the slices start crisping right away.
  • Arrange the slices in a single layer in the air fryer basket. Work in batches if needed — overlapping will steam the potatoes instead of crisping them.
  • Air fry at 375°F (190°C) for 8 to 12 minutes, flipping the slices halfway through. Watch closely near the end; thin slices can go from golden to burnt quickly.
  • Remove the slices to a rack or paper towel to cool for a couple of minutes. They will crisp up further as they rest.
  • If using parmesan or nutritional yeast, sprinkle it on while the slices are hot. Finish with a sprinkle of chopped parsley or cilantro and serve warm.
