- 2 pounds sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon fresh parsley
- 1 teaspoon maple syrup or honey
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it — a hot oven is key to getting crisp edges.
Wash and dry the sweet potatoes. Peel them if you prefer, or leave the skins on for extra texture and nutrients. Cut into even 1-inch cubes so they cook uniformly.
Place the sweet potato cubes in a large bowl. Drizzle with olive oil and toss to coat evenly. Use just enough oil to lightly coat each cube.
Sprinkle kosher salt, black pepper, smoked paprika, and garlic powder over the cubes. Toss again to distribute the seasonings so each piece is well-flavored.

If you like a touch of sweetness, remove the tray with 5 minutes left and drizzle maple syrup or honey over the cubes, tossing gently and returning them to the oven to finish caramelizing.
