  • 2 large sweet potatoes, peeled and cut into fry-shaped sticks
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (smoked or regular)
  • 1/4 teaspoon dried oregano or dried thyme
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions
 

  • Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
  • Meanwhile, pat the sweet potato fries dry with a clean towel. This helps the oil and seasonings cling and promotes crispness.
  • In a large bowl, toss the fries with olive oil, minced garlic, salt, pepper, paprika, and oregano until evenly coated.
  • Spread the fries in a single layer on a grill-safe tray or directly on the grill grates if you’re careful about turning them, ensuring they’re not overcrowded.
  • Grill for 6–8 minutes per side, turning once, until the edges are crisp and the centers are tender. If your grill runs hot, cook a little longer but watch closely to avoid burning.
  • Sprinkle grated Parmesan over the hot fries and close the lid for 30–60 seconds to let the cheese melt slightly and infuse with garlic aroma.
  • Remove from the grill and transfer to a serving plate. Garnish with chopped parsley if desired and serve warm.
