Prep Time 15 minutes mins
Cook Time 20 minutes mins
- 4 tortillas whole-wheat tortillas
- 2 cups cooked chicken breast, shredded
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup Greek yogurt
- 2 tbsp grated parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- salt and pepper
- 1 tsp extra-virgin olive oil
In a small bowl, whisk together the Greek yogurt, grated parmesan, lemon juice, Dijon mustard, minced garlic, olive oil (if using), and a pinch of salt and pepper. This creates a light, creamy Caesar dressing with a bright finish.
In a medium bowl, combine the shredded chicken with half of the dressing. Toss until the chicken is evenly coated and glossy. This keeps the chicken flavorful without overwhelming the wrap.
To assemble, lay a tortilla on a clean surface. Layer a bed of chopped romaine down the center, then add a scoop of the dressed chicken, followed by tomatoes. Drizzle a little extra dressing over the top if you like a stronger Caesar note.
Fold the sides of the tortilla in toward the center and roll tightly from the bottom to enclose the filling. Repeat with the remaining tortillas and fillings.
If you prefer warm wraps, you can warm them briefly in a dry skillet for 1–2 minutes per side to melt the cheese slightly and soften the tortilla.
