Ingredients

  • 4 tortillas whole-wheat tortillas
  • 2 cups cooked chicken breast, shredded
  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Greek yogurt
  • 2 tbsp grated parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • salt and pepper
  • 1 tsp extra-virgin olive oil

Instructions

  • In a small bowl, whisk together the Greek yogurt, grated parmesan, lemon juice, Dijon mustard, minced garlic, olive oil (if using), and a pinch of salt and pepper. This creates a light, creamy Caesar dressing with a bright finish.
  • In a medium bowl, combine the shredded chicken with half of the dressing. Toss until the chicken is evenly coated and glossy. This keeps the chicken flavorful without overwhelming the wrap.
  • To assemble, lay a tortilla on a clean surface. Layer a bed of chopped romaine down the center, then add a scoop of the dressed chicken, followed by tomatoes. Drizzle a little extra dressing over the top if you like a stronger Caesar note.
  • Fold the sides of the tortilla in toward the center and roll tightly from the bottom to enclose the filling. Repeat with the remaining tortillas and fillings.
  • If you prefer warm wraps, you can warm them briefly in a dry skillet for 1–2 minutes per side to melt the cheese slightly and soften the tortilla.
