Ingredients
  

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley
  • optional lemon zest or a squeeze of lemon

Instructions
 

  • Wash and dry the sweet potatoes. Peel if you prefer, then cut into 1/2-inch cubes or sticks for even cooking.
  • Place the cut sweet potatoes in a large bowl. Toss with olive oil to coat evenly.
  • Sprinkle cornstarch over the potatoes and toss until lightly dusted—this helps create a crispy exterior.
  • Add paprika, garlic powder, sea salt, and black pepper. Toss well so every piece is seasoned.
  • Preheat your air fryer to 400°F (200°C) for 3–5 minutes while you arrange the potatoes in a single layer in the basket. Work in batches if necessary; overcrowding reduces crispiness.
  • Air fry at 400°F (200°C) for 12–16 minutes, shaking the basket or flipping the potatoes every 4–5 minutes to ensure even browning. Cook until golden brown and crisp on the edges.
  • Remove the potatoes to a serving platter. Sprinkle with chopped parsley and lemon zest or a light squeeze of lemon if using. Serve immediately while hot and crisp.
