Honey Garlic Chicken and Broccoli

- 1 lb boneless skinless chicken breast, cut into bite-sized pieces
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1/4 cup honey
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil (optional)
- 1 teaspoon cornstarch
- 2 tablespoons water (for slurry)

Pat the chicken dry and season lightly with salt and pepper. This helps the pieces sear and develop a nice color.
Heat a large skillet over medium-high heat and add a thin layer of oil. Sear the chicken in batches until golden and just cooked through, about 3–4 minutes per side. Transfer to a plate.
In the same skillet, add a touch more oil if needed and sauté the minced garlic for about 30 seconds until fragrant. Add the broccoli and stir-fry for 2–3 minutes until bright green and tender-crisp.
Return the chicken to the skillet. In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil (if using), and the cornstarch with water to make a glossy sauce.
Pour the honey-garlic sauce over the chicken and broccoli. Stir to coat and cook for 2–3 minutes, allowing the sauce to thicken and cling to the pieces. Taste and adjust with a pinch more salt or pepper if needed.
Serve immediately over warm cooked rice or enjoy as-is. Garnish with sesame seeds or sliced green onions if you like.
