Ingredients

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper
  • optional hot sauce or red pepper flakes

Instructions

  • Prepare your workstation: have shredded chicken, softened cream cheese, cheddar, ranch, and cooked bacon within easy reach. If you’re starting from raw chicken, you’ll want to cook and shred it first.
  • In a large skillet over medium heat, render a little of the bacon fat if you’re using raw bacon, then cook until crisp. Remove the bacon and set aside, leaving a flavorful base in the pan.
  • Stir in the cream cheese and ranch dressing into the skillet. Let them melt together slowly, stirring continuously to form a smooth sauce.
  • Add the shredded chicken to the sauce, mixing until thoroughly coated. Sprinkle in garlic powder, onion powder, salt, and pepper; taste and adjust seasoning as needed.
  • Fold in half of the shredded cheddar and all the crumbled bacon. Continue to cook just until the cheese melts and the mixture is hot all the way through.
  • Remove from heat and sprinkle the remaining cheddar over the top. Cover the pan briefly to let the cheese melt into a glossy, creamy surface.
  • Spoon onto plates and garnish with a little extra bacon crumbles if desired. Serve hot, with a side of bright greens or cauliflower rice to keep it keto-friendly.
