Prep Time 15 minutes mins
Cook Time 20 minutes mins
- 2 cups shredded cooked chicken
- 8 oz cream cheese, softened
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt and pepper
- optional hot sauce or red pepper flakes
Prepare your workstation: have shredded chicken, softened cream cheese, cheddar, ranch, and cooked bacon within easy reach. If you’re starting from raw chicken, you’ll want to cook and shred it first.
In a large skillet over medium heat, render a little of the bacon fat if you’re using raw bacon, then cook until crisp. Remove the bacon and set aside, leaving a flavorful base in the pan.
Stir in the cream cheese and ranch dressing into the skillet. Let them melt together slowly, stirring continuously to form a smooth sauce.
Add the shredded chicken to the sauce, mixing until thoroughly coated. Sprinkle in garlic powder, onion powder, salt, and pepper; taste and adjust seasoning as needed.
Fold in half of the shredded cheddar and all the crumbled bacon. Continue to cook just until the cheese melts and the mixture is hot all the way through.
Remove from heat and sprinkle the remaining cheddar over the top. Cover the pan briefly to let the cheese melt into a glossy, creamy surface.
Spoon onto plates and garnish with a little extra bacon crumbles if desired. Serve hot, with a side of bright greens or cauliflower rice to keep it keto-friendly.
