Ingredients
  

  • 4 small sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon fresh thyme leaves
  • 1 garlic clove, minced (optional)

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  • Slice each sweet potato into ½-inch rounds or wedges, keeping pieces roughly uniform so they cook evenly.
  • Toss the potato pieces with olive oil, salt, pepper, and minced garlic (if using) until well coated.
  • Spread the potatoes in a single layer on the prepared baking sheet. Roast for 15 minutes, then flip and roast for another 10–12 minutes, until edges are caramelized and centers are tender.
  • Remove from the oven and sprinkle with crumbled feta and fresh thyme. Return to the oven for 2–3 minutes to warm the feta slightly and let the thyme perfume the potatoes.
  • Serve warm, with a final light drizzle of olive oil if you like and a pinch more thyme.
