One-Pot Chicken Sausage and Orzo Skillet

Ingredients
  

  • 12 oz chicken sausage (spicy or mild)
  • 1 pound orzo
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 red bell pepper colorful bell pepper
  • 1 cup cherry tomatoes
  • 2 cups chicken broth
  • 1 cup water
  • 1 ounce fresh spinach
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 0.25 cup fresh basil

Instructions
 

  • In a large, deep skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until lightly browned and cooked through, about 4-5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the chopped onion and bell pepper. Sauté until the onion becomes translucent and the peppers are a bit tender, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  • Return the sausage to the pot. Stir in the orzo, cherry tomatoes, Italian seasoning, and a pinch of salt and pepper. Pour in the chicken broth and water; bring to a boil.
  • Reduce heat to a simmer and cover. Cook, stirring occasionally, until the orzo is tender and has absorbed most of the liquid, about 9-11 minutes. If the mixture looks dry before the orzo is done, add a splash more broth or water.
  • Stir in the spinach and Parmesan cheese until the greens wilt and the cheese melts into the sauce. Taste and adjust seasoning with salt and pepper as needed. If using, fold in fresh basil for a fragrant finish.
  • Remove from heat and let rest for 2 minutes before serving. Serve warm, with extra Parmesan on top if you like.
