  • 3 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 2 cups cooked rice
  • 2 tbsp poppy seeds
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crushed crackers or breadcrumbs

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 2-quart casserole dish or a similar baking pan to prevent sticking and ensure easy serving.
  • In a large mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, and chicken broth. Use a whisk or spoon to blend until smooth and creamy. This is your base sauce that will coat every bite.
  • Stir in the cooked rice, finely chopped onion (if using), poppy seeds, salt, and black pepper. Mix until everything is evenly distributed and the grains of rice are coated with the creamy mixture.
  • Pour the mixture into the prepared casserole dish, spreading it into an even layer. This helps the bake cook evenly and makes for clean, serving portions.
  • Sprinkle the shredded cheddar cheese over the top. The cheese will melt into the sauce as the casserole heats, adding a gooey, comforting finish.
  • Toss the crushed crackers or breadcrumbs with a light drizzle of melted butter (optional) for extra crunch and flavor. Scatter the topping over the cheese layer.
  • Bake in the preheated oven for about 25 to 30 minutes, or until the top is golden brown and the sauce is bubbling around the edges. If you’d like a more browned topping, switch the oven to broil for the last 1–2 minutes—watch closely to prevent burning.
  • Allow the casserole to rest for 5 to 10 minutes after baking. Resting helps the sauce thicken slightly and makes serving easier.
