Slow Cooker Mediterranean Chicken with Artichokes and Capers

- 1.5 pounds boneless, skinless chicken thighs
- 1 (14 oz) can artichoke hearts, drained and halved
- 1 /4 cup capers, drained
- 1 cup cherry tomatoes, halved
- 1/4 cup pitted kalamata olives
- 1 cup low-sodium chicken broth
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 tablespoon fresh lemon juice

If you have time and prefer a richer base, you can quickly sear the chicken thighs in a small amount of olive oil in a skillet over medium-high heat for 2-3 minutes per side before adding them to the slow cooker. This step is optional but adds color and extra depth.
Layer the ingredients in the slow cooker: place the chicken thighs at the bottom, then add artichoke hearts, capers, cherry tomatoes, olives, and garlic on top.
Pour in the chicken broth and sprinkle the oregano, thyme, and paprika. Finish with lemon juice and a pinch of salt and pepper.
Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and the flavors meld beautifully.
Taste and adjust seasoning with more salt, pepper, or lemon juice if you like a brighter finish.
If you seared the chicken first, remove the lid, let the sauce settle for a few minutes, and spoon the sauce over the chicken to serve. Garnish with chopped parsley if you have it.
