Slow Cooker Mediterranean Chicken with Artichokes and Capers

Ingredients
  

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 (14 oz) can artichoke hearts, drained and halved
  • 1 /4 cup capers, drained
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pitted kalamata olives
  • 1 cup low-sodium chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh lemon juice
  • to taste salt and pepper
  • 1 tablespoon olive oil (optional, for a quick sear)

Instructions
 

  • If you have time and prefer a richer base, you can quickly sear the chicken thighs in a small amount of olive oil in a skillet over medium-high heat for 2-3 minutes per side before adding them to the slow cooker. This step is optional but adds color and extra depth.
  • Layer the ingredients in the slow cooker: place the chicken thighs at the bottom, then add artichoke hearts, capers, cherry tomatoes, olives, and garlic on top.
  • Pour in the chicken broth and sprinkle the oregano, thyme, and paprika. Finish with lemon juice and a pinch of salt and pepper.
  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and the flavors meld beautifully.
  • Taste and adjust seasoning with more salt, pepper, or lemon juice if you like a brighter finish.
  • If you seared the chicken first, remove the lid, let the sauce settle for a few minutes, and spoon the sauce over the chicken to serve. Garnish with chopped parsley if you have it.
